From the Sketchbook - Spaghetti Squash Stirfry / by Esther Loopstra

I love me some Spaghetti Squash!! In the past few years I've found out that my body hates processed carbs :( So, I do a sort of modified low carb diet. Since I usually try to avoid as many carbs as I can during the week, my favorite new find has been Spaghetti Squash. It's yummy, very inexpensive and you can use it to make a lot of different dishes. If you haven't tried it, you simply bake it and when it's done, you can take the insides out with a fork and they look like spaghetti!. Normally I make it with sauce like normal spaghetti and it is delicious, but I wanted to try an asian flare. Just bake it for 30 minutes or so and add it to your favorite stirfry with lots of healthy veggies instead of having it with rice or noodles!

Next time I want to try adding curry power and coconut milk to it, because I love curried noodles.
